The Regency’s Executive Chef Pat Marone Gets Cooking at the Glen Cove Senior Center

On Tuesday, September 9th, The Regency’s Award Winning Executive Chef, Pat Marone, once again cooked up something hot and delicious for the Golden Age Happy Hours Club at The Glen Cove Senior Center.

Chef Pat is well known because he often volunteers to do some of his much loved “Cooking Italian for Seniors” demonstrations for various senior groups and organizations in the area. This time he decided to make one of his most popular dishes, Pasta e Piselli. Everyone enjoyed learning how to make this mouthwatering meal by watching Chef Pat’s animated demonstration. And of course everyone REALLY loved tasting the dish afterwards. It was absolutely a hit! While everyone was enjoying their food Charlie Pappas, Club President, and his assistant, Lucy Van Horn, presented Chef Pat with a Cook Book Organizer to thank him for his continued generous support of their Club.
The Golden Age Happy Hours Club has been an active part of the Glen Cove Senior Center for over 20 years. Chef Pat’s Mouthwatering Pasta e Piselli (Pasta with Peas)

Chef Pat's tempting Pasta e Piselli

This Pasta e Piselli recipe is a great classic Italian pasta dish that is light, easy to make and delicious. A great family meal!
Ingredients:
¼ Cup(s) Extra Virgin Olive Oil
5 Each Garlic Cloves, thinly sliced
1 Cup Onions, diced
1 Cup Roma Tomatoes, seeded, diced.
2 Cups Peas
4 Cups Pasta Water
2 Cups Chicken Stock
1 Pound Ditalini Pasta, Cooked al dente
Directions:
In a large sauté pan, add olive oil on high heat
Once oil is hot, add garlic and lightly toast until slightly golden in color
Add a pinch of red pepper flakes, then onions
Let onions cook down, stir so garlic doesn’t burn
Add tomatoes and cook down for 1 ½ minutes
Add basil then season with salt and pepper
Add peas, stir to combine
Add chicken stock and pasta water
Cook for about 3-4 minutes
Add pasta and toss to combine into sauce
Let pasta cook in sauce for another minute
Plate up and enjoy!
Prep time = 5 minutes
Cook time = 10 minutes
Ready in = 15 minutes
Serving = 3
