Regency Assisted Living Pumpkin Creations Contest
Pumpkin Spice Cannoli Dip

1 32 oz container of Whole Milk Ricotta Cheese
1 pint of cold Heavy Whipping Cream
1 can of Pumpkin Puree
½ cup White Chocolate Chips
½ cup Butterscotch Chips
2 Tbs. of White Sugar (for whipping cream)
½ tsp. Vanilla Extract (for whipping cream)
¼ cup White Sugar (for ricotta)
1/8 cup Brown Sugar (for ricotta)
½-1 tsp. Ground Ginger (to taste)
½-1 tsp. Allspice (to taste)
1-2 tsp. of Nutmeg (to taste)
1-2 Tbs. of Cinnamon (to taste)
SUGGESTED (FOR DIPPING)

In a large mixing bowl, fold together Ricotta and Pumpkin Puree with a rubber spatula. Add ¼ cup
white sugar, 1/8 cup brown sugar, and all spices (to taste). Set aside.
In a medium mixing bowl, combine 2 tablespoons white sugar, ½ teaspoon vanilla extract and one pint
whipping cream. With a hand mixer, whip cream until stiff peaks are noted (about 1-2 minutes).
With a rubber spatula, gently incorporate whipped cream into ricotta mixture. Fold in white chocolate and butterscotch chips (save a teaspoon of each for garnish). Set in refrigerator for approximately 30 minutes to 1 hour until chilled. Transfer to a bowl or pie plate for serving. Garnish with left over white chocolate and butterscotch chips. Sprinkle some cinnamon on top (for garnish). Serve with your choice of chips or cookies for dipping! Refrigerate for at least an hour before serving.
Pumpkin Spice Chocolate Chip Cookies

1 Box of Spice Cake Mix
1 Can of Pumpkin Puree
1 Bag of Chocolate Chips
Brown Sugar (optional)
Preheat the oven to 350 degrees. In a medium bowl mix together the Spice Cake mix and the Pumpkin Puree. Add the chocolate chips and mix again.
Using a cookie scoop or spoon, drop the dough onto a baking sheet. Place cookies about 1 inch apart. Top each cookie with brown sugar if so desired.
Bake them at 350 degrees for 7 – 9 minutes
Prep time: 5 minutes
Bake time: 7 -9 minutes
